Ingredients
- 4-6 LBS Pork Shoulder Roast
Marinade
- 8 cloves garlic minced
- 1/2 Cup cilantro chopped
- 1 Cup orange Juice or 1/3 cup frozen thawed orange juice
- 1 TBSP Salt
- 2 Tsp Oregano
- Zest of 1 lime and juice
Black Beans
- 3 cans black beans (not drained)
- 1/2 Cup juice from Roast
- 1 Tsp Salt
- 1 Tsp Cumin
- 2 Bay leaves
Instructions
- Marinate the meat overnight or up to 3 days. The longer the better.
- Put in the crock pot, along with the marinade and cover with water.
- Cook on low for 8-10 hours.
- 1 hour before serving simmer the beans.
- Enjoy!

Can be made in a dutch oven at 325 degrees for 4-5 hours.
